ATTENTION CONNECTICUT FOOD ESTABLISHMENTS
NEW LAW IS IN
EFFECT
The State Of Connecticut - Department of
Environmental Protection has issued a
"General Permit for the Discharge of
Wastewater Associated with Food
Preparation Establishments." The new law
requires that Class III or Class IV
establishments comply with this law by
July 1, 2011, however four conditions
exist that may force earlier compliance.
The four conditions include renovations,
a change in ownership, areas of sewer
problems and local municipalities that
implement the program earlier. The new
law requires a minimum 1000 gallon
outdoor passive grease interceptor or an
Automatic Grease Recovery Unit. The law
also requires that a record of all
inspections, cleaning and maintenance be
recorded and kept on site for a period
of five years.
An AGRU(s) shall be installed
immediately downstream of each fixture
or multiple fixtures;
-
pot sinks;
-
pre-rinse sinks;
-
any sink into
which fats, oils, or grease are
likely to be introduced;

soup kettles or
similar devices;
-
wok stations;
-
floor drains or
sinks into which kettles may be
drained;
-
automatic hood
wash units:
-
any other fixtures
or drains that are likely to allow
fats, oils and
-
grease to be
discharged.

Grease Traps Helping Green the World
Yes, grease traps have always
protected the world’s sewer systems
by catching food service
establishment fats and oils. In
today’s energy tight economy, grease
traps also provide clean recycled
energy source material for biodiesel
fuel. Brown grease is now “Green”.
